  • 2 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 packages cream cheese (8 ounces each)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup light brown sugar
  • 1/2 cup light corn syrup
  • 1/2 cup heavy whipping cream
  • 2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 13×9 baking dish with parchment paper.
  2. In a food processor, pulse graham crackers with sugar until fine crumbs form. Add melted butter and pulse until combined. Press the mixture firmly into the bottom of the prepared baking dish.
  3. In a mixing bowl, beat softened cream cheese with sugar, eggs, and vanilla using an electric mixer until fluffy (about 3-5 minutes). Pour over the crust.
  4. For the pecan topping, combine brown sugar, corn syrup, cream, butter, and salt in a saucepan over medium heat. Bring to a boil while stirring for one minute. Remove from heat and stir in vanilla extract and chopped pecans. Allow to cool slightly before pouring over the cheesecake layer.
  5. Bake for approximately 35 minutes or until slightly set in the center. Cool completely before refrigerating for at least four hours or overnight. Slice into squares to serve.
