  • 1/2 cup brown sugar (packed)
  • 1/3 cup granulated sugar
  • 1/2 cup smooth peanut butter
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup old-fashioned oats
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (180°C) and line cookie sheets with baking paper.
  2. In a large bowl, beat softened butter, brown sugar, and granulated sugar until combined.
  3. Add the egg and vanilla extract; mix until smooth.
  4. Gradually mix in flour, baking powder, baking soda, and salt until just combined.
  5. Stir in oats by hand and fold in 3/4 cup of chocolate chips.
  6. Form dough balls using about 3 tablespoons of dough each; chill if sticky.
  7. Place on lined sheets about 2 inches apart and bake for 10-12 minutes until tops are set.
  8. Cool on sheets for at least 10 minutes before serving.
