  • 1 cup granulated sugar
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 cup cold unsalted butter (cubed)
  • 1 large egg
  • 6 cups sliced fresh peaches
  • ⅓ cup granulated sugar (for filling)
  • 1½ tablespoons cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F and line a 9×13 inch baking pan with parchment paper.
  2. In a mixing bowl, combine the first set of sugar, flour, baking powder, cinnamon, and salt. Mix in cold butter until crumbly, then stir in egg and vanilla.
  3. Press half of the mixture into the bottom of the pan. In another bowl, mix peaches with sugar, cornstarch, lemon juice, and cinnamon; spread over crust.
  4. Sprinkle remaining crust mixture on top and bake for about 45 minutes until golden brown.
  5. Allow to cool before slicing into bars.
