  • ½ cup brown sugar
  • ¼ cup melted butter
  • 8 oz unsalted butter (room temperature)
  • 2 cups granulated sugar
  • 8 oz cream cheese (room temperature)
  • 5 large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tbsp vanilla extract
  • 4 large peaches (cored and sliced)

Instructions

  1. Preheat your oven to 300°F (150°C) and grease a large bundt pan.
  2. Layer half of the peach slices at the bottom of the pan, sprinkle with a mixture of brown sugar, cinnamon, nutmeg, melted butter, and bourbon.
  3. In a stand mixer, cream together unsalted butter and granulated sugar until fluffy; then mix in cream cheese.
  4. Add eggs one at a time, mixing well after each addition.
  5. Combine flour, baking powder, and salt; gradually add to the batter along with vanilla extract and milk until just combined.
  6. Spoon half of the batter over peaches, layer remaining peaches, sprinkle with leftover sugar mixture, then top with remaining batter.
  7. Bake for about 60 minutes or until a toothpick comes out clean.
  8. Allow to cool before drizzling with icing made from confectioner's sugar, vanilla extract, and milk.
