  • 1 tablespoon extra virgin olive oil
  • 1 cup diced onion
  • 2 tablespoons minced garlic
  • 1 cup quartered carrots
  • 2 cans (15 oz each) cannellini beans, rinsed and drained
  • 1 can (15 oz) tomato sauce
  • 4 cups low sodium vegetable broth
  • 2 cups water
  • 1 cup dry ditalini pasta
  • Seasonings: bay leaf, dried basil, parsley, oregano, black pepper, red pepper flakes

Instructions

  1. Prepare your ingredients by chopping the onion, garlic, and carrots. Rinse the cannellini beans.
  2. In a large pot over medium heat, sauté the onion in olive oil until translucent. Add garlic and cook until fragrant.
  3. Stir in the carrots and sauté for three minutes before adding the beans.
  4. Pour in the tomato sauce, vegetable broth, and water; add bay leaf and seasonings. Stir well.
  5. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
  6. In the last five minutes of cooking time, add the ditalini pasta and cook until al dente.
  7. Serve hot after discarding the bay leaf.
