  • 6 teaspoons olive oil (divided)
  • 8 ounces whole baby bella mushrooms
  • 2 tablespoons butter
  • 1 medium red onion
  • 10 ounces penne pasta
  • 2 cloves garlic
  • 2 tablespoons flour
  • 1 cup madeira wine
  • 1 cup beef broth
  • ¼ cup heavy cream
  • ¼ cup parmesan cheese
  • ⅛ cup parsley

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook chicken until golden brown; set aside.
  2. In the same skillet, add more olive oil and sauté mushrooms until golden; remove from skillet.
  3. Melt butter in the skillet, add sliced onions, and cook until soft, about 20 minutes. Add garlic and flour, stirring until golden.
  4. Pour in madeira wine and simmer until reduced. Add beef broth, then stir in cream, parmesan, and cooked chicken and mushrooms.
  5. Cook pasta al dente according to package instructions; drain and toss into the sauce mixture. Serve hot.
