  • 120 g boiling water
  • 200 g granulated sugar
  • 50 g Dutch processed cocoa powder
  • 160 g all-purpose flour
  • 1 tsp instant espresso powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • ½ tsp salt
  • 120 g sour cream (room temperature)
  • 75 g vegetable oil
  • 2 large eggs (room temperature)
  • 1 ½ tsp vanilla extract
  • 6 Oreo cookies
  • 200 g butter (for frosting)
  • 315 g powdered sugar
  • 1 tsp vanilla extract
  • 2 tsp whole milk (room temperature)
  • 12 Oreos for decoration + extra for crumbling on top

Instructions

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. In a bowl, mix boiling water and cocoa powder until smooth. In another bowl, combine sugar, flour, espresso powder, baking powder, baking soda, and salt. Mix in sour cream, oil, eggs, and vanilla extract. Stir in cocoa mixture until blended.
  3. Fill cupcake liners two-thirds full with batter and bake for 20–22 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  4. For frosting: Beat room temperature butter until creamy. Gradually mix in powdered sugar, vanilla extract, and milk until smooth. Fold in crushed Oreos.
  5. Frost cooled cupcakes generously and decorate with additional Oreos or crumbled pieces as desired.
