  • 6 boneless skinless chicken thighs
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons paprika
  • 1 teaspoon smoked paprika
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon turmeric
  • ½ teaspoon ground cardamom
  • ¼ teaspoon chilli flakes (red pepper flakes)
  • 1.5 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 medium onion, halved and finely sliced
  • 3 cloves garlic, crushed
  • 180g uncooked long grain rice
  • 2 cups chicken stock (hot)
  • Additional salt and black pepper to taste
  • 2 tablespoons fresh chopped parsley
  • ½ teaspoon dried dill

Instructions

  1. Slice chicken thighs in half and marinate with spices and lemon juice.
  2. Sear the chicken in a large deep frying pan with olive oil until golden brown.
  3. Add rice and cook briefly before pouring in hot chicken stock; do not stir.
  4. Allow the mixture to simmer until most liquid is absorbed, then cover and let steam off heat.
