  • 2 lbs boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons fajita seasoning (or taco seasoning)
  • 1 yellow onion, diced
  • 1 yellow bell pepper, sliced into 1 inch long strips
  • 1 green bell pepper, sliced into 1 inch long strips
  • 1 red bell pepper, sliced into 1 inch long strips
  • 4 cloves garlic, minced
  • 2 cups chicken stock (reduced-sodium)
  • 1/2 cup heavy cream
  • 10 oz can diced tomatoes
  • 8 oz dried bow tie pasta
  • Kosher salt and black pepper (to taste)
  • Lime wedges
  • Sour cream
  • Sliced green onions
  • Chopped cilantro

Instructions

  1. Heat 2 tablespoons of olive oil in a Dutch oven over medium-high heat. Add chicken seasoned with fajita seasoning; cook until golden brown. Remove and set aside.
  2. In the same pot, add remaining oil, onions, bell peppers, and seasoning; sauté until softened.
  3. Stir in garlic and cook until fragrant. Set vegetables aside with chicken.
  4. Pour in chicken stock, heavy cream, diced tomatoes, and pasta; season with salt and pepper. Bring to a boil.
  5. Reduce heat to simmer for about 10 minutes or until pasta is tender.
  6. Return chicken and vegetables to the pot; stir to combine and warm through.
