  • 1 cup long-grain white rice
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups chicken broth
  • 1/4 cup BBQ sauce
  • 1 cup frozen corn
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the sliced smoked sausage and brown for about 5 minutes.
  2. Sauté diced onion and bell pepper in the skillet for 3–4 minutes until softened.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add rice to the mixture and toast lightly for about 2 minutes.
  5. Pour in diced tomatoes (with juices), chicken broth, BBQ sauce, smoked paprika, black pepper, and salt. Mix well.
  6. Bring to a boil; reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.
  7. Stir in frozen corn and cook uncovered for another 5 minutes until heated through.
