  • 4 boneless chicken breasts
  • 500g baby potatoes, halved
  • 250g green beans, trimmed
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Toss halved baby potatoes with 1 tbsp olive oil, thyme, salt, and pepper; spread in a large baking dish.
  3. In a small bowl, mix 2 tbsp olive oil, garlic, smoked paprika, thyme, parsley, lemon juice (and Dijon mustard if using) for the herb rub.
  4. Rub the mixture over both sides of the chicken breasts and place them among the potatoes.
  5. Roast uncovered for about 25 minutes.
  6. Toss green beans with olive oil and salt; add them to the baking dish after 25 minutes.
  7. Continue roasting for another 15-20 minutes until chicken reaches an internal temperature of 75°C (165°F) and potatoes are golden brown.
