  • 6 medium bone-in, skin-on chicken thighs (approximately 3 pounds)
  • 2 tablespoons olive oil
  • 2 tablespoons coconut aminos (or soy sauce)
  • 2 tablespoons maple syrup
  • 3 cloves garlic, minced
  • 1 teaspoon fresh rosemary leaves
  • ¼ cup dry white wine (or chicken broth)
  • Salt to taste

Instructions

  1. In a mixing bowl, whisk together olive oil, coconut aminos, maple syrup, minced garlic, rosemary leaves, and white wine. Stir in fresh cranberries.
  2. Marinate the chicken thighs in the mixture for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Heat a cast iron skillet over medium-high heat; add olive oil and sear chicken thighs skin-side down for about 5–7 minutes until golden brown.
  5. Flip the chicken, pour in remaining marinade with extra cranberries and rosemary, and bake in the oven for about 30–35 minutes or until chicken reaches an internal temperature of 165°F (75°C).
  6. Allow the chicken to rest before serving.
