  • 4 cloves fresh garlic, minced
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 cups mixed vegetables (bell peppers, zucchini, cherry tomatoes)
  • 2 tablespoons low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Spray a large oven-safe skillet with nonstick spray.
  2. Season chicken breasts on both sides with salt and pepper; sear in the skillet for 5-7 minutes per side until golden brown.
  3. In a bowl, whisk together balsamic vinegar, honey, minced garlic, and soy sauce.
  4. Remove chicken temporarily; sauté mixed vegetables in the same skillet until slightly softened.
  5. Return chicken to skillet on top of vegetables; pour sauce over everything.
  6. Transfer skillet to preheated oven and bake for 15-20 minutes or until chicken reaches an internal temperature of 165°F (75°C). Serve drizzled with sauce.
