  • 8 chicken drumsticks
  • 600 g potatoes, peeled and cubed
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium onion, sliced
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 1/2 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp chili flakes (optional)
  • 1 tsp ground cumin
  • Salt and black pepper to taste
  • 200 ml chicken broth

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. In a large mixing bowl, mix olive oil, garlic, paprika, oregano, cumin, chili flakes (if desired), salt, and black pepper. Add chicken drumsticks and toss until coated.
  3. In a baking dish, combine cubed potatoes, bell peppers, and onion. Drizzle with olive oil and season with salt and pepper. Nestle the marinated chicken on top.
  4. Pour chicken broth into the bottom of the pan without covering the chicken.
  5. Bake uncovered for 50-55 minutes until the chicken is browned and cooked through. Turn halfway for even cooking.
