  • 6 lbs green tomatoes (about 24 medium-sized tomatoes)
  • 5 cups granulated sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground cloves
  • 1 medium lemon (washed, deseeded, and thinly sliced)
  • 2 tbsp distilled white vinegar

Instructions

  1. Prepare your jars and canning equipment.
  2. Halve and core the green tomatoes, then coarsely chop them.
  3. Combine chopped tomatoes with sugar, cinnamon, cloves, and lemon slices in a large pot.
  4. Bring the mixture to a boil over medium-high heat for 25 minutes while stirring frequently.
  5. Reduce heat to low and simmer for another 30 minutes until thickened.
  6. Fill sterilized jars with the hot jam, leaving 1/4-inch headspace.
  7. Seal jars with two-piece lids and process in a hot water canner for 20 minutes.
  8. Cool jars completely at room temperature before storing.
