  • 1 cup milk
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 pound haddock fillets, cut into bite-sized pieces
  • 1 pound shrimp, peeled and deveined
  • 1 cup scallops, halved if large
  • Salt and freshly ground black pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot or Dutch oven, melt the butter over medium heat. Sauté the onion, carrots, and celery until softened (about 5–7 minutes).
  2. Stir in the garlic and cook for an additional minute.
  3. Add the diced potato, seafood stock, thyme, and bay leaf; bring to a gentle simmer. Cook until potatoes are tender (15–20 minutes).
  4. Remove the bay leaf; stir in heavy cream and milk until heated through (do not boil).
  5. Gently fold in haddock, shrimp, and scallops; cook until seafood is opaque (5–7 minutes).
