  • 46 tortillas

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons rice wine vinegar
  • 1/2 tablespoon minced garlic
  • 1/2 tablespoon minced ginger
  • 1 teaspoon sriracha sauce
  • 12 tablespoons water (optional, to thin the dressing)

Instructions

  1. In a small bowl, whisk together peanut butter, low-sodium soy sauce, brown sugar or honey, rice wine vinegar, minced garlic, minced ginger, and sriracha sauce. Adjust consistency with water if needed.
  2. In a large bowl, combine chopped chicken breasts with coleslaw mix, grated carrots (if using), chopped cilantro, and roasted peanuts.
  3. Pour the dressing over the filling mixture and toss well. Allow flavors to meld for a few minutes.
  4. Warm tortillas in the microwave for about 30 seconds until pliable. Divide filling evenly among tortillas and wrap tightly before serving.
