  • ½ cup granulated sugar
  • 2½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • 1 cup white chocolate chips
  • 24 oz full-fat cream cheese (room temperature)
  • 1¼ cups heavy cream (divided)
  • 1½ cups powdered sugar
  • 1 teaspoon vanilla
  • Fresh raspberries for garnish

Instructions

  1. Prepare the raspberry sauce by cooking thawed raspberries, sugar, water, and cornstarch in a saucepan over medium heat until thickened. Allow it to cool.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan to form the crust.
  3. Melt white chocolate chips until smooth; let cool slightly. In a bowl, whip 1 cup heavy cream until stiff peaks form.
  4. Beat cream cheese until smooth, then gradually mix in powdered sugar and vanilla. Fold in melted white chocolate and whipped cream gently.
  5. Layer half of the cheesecake filling over the crust, swirl in half of the raspberry sauce, then top with remaining filling and sauce.
