  • 2 pounds chuck roast
  • 4 dried guajillo peppers
  • 1 medium onion
  • 4 garlic cloves
  • 1 cup fresh cilantro
  • 4 cups beef broth

Instructions

  1. Cut the chuck roast into large chunks; season generously with salt and pepper.
  2. Soak the dried guajillo peppers in hot water for 15 minutes until softened.
