  • 1 cup long-grain white rice (or basmati)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups cremini or button mushrooms, sliced
  • 2 cups vegetable broth (or chicken broth)
  • ½ teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Rinse the rice under cold water until it runs clear to remove excess starch.
  2. Prepare your ingredients by chopping the onion, mincing the garlic, and slicing the mushrooms.
  3. In a large skillet over medium heat, heat olive oil and sauté the onion for 3–4 minutes until translucent. Add garlic and cook for another minute before adding mushrooms; sauté for 5–6 minutes until golden brown.
  4. Stir in rinsed rice to coat with oil and aromatics. Add broth, thyme, salt, and pepper; bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15–18 minutes or until rice is tender and liquid is absorbed.
  6. Remove from heat and let sit covered for 5 minutes before fluffing with a fork. Garnish with parsley.
