  • 1 lb boneless skinless chicken breast
  • 2 cups mushrooms (cut in half)
  • 1 clove garlic (minced)
  • 3 sprigs thyme
  • 1 1/2 cups dry white wine
  • 1/2 cup seasoned flour
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/3 cup shredded asiago cheese

Instructions

  1. Pound the chicken breasts to uniform thickness and cut into serving size pieces.
  2. In a skillet, heat butter and olive oil over medium heat. Dredge the chicken in seasoned flour and sauté until golden brown on both sides. Remove from pan.
  3. Add remaining olive oil to the skillet and sauté mushrooms and garlic until browned.
  4. Deglaze the pan with white wine, scraping up any browned bits. Add thyme.
  5. Return chicken to the pan, bring to a boil, cover, and simmer for 15-20 minutes.
  6. Remove chicken again, add cream and asiago cheese to the pan, stirring until melted and sauce thickens.
  7. Return chicken to the sauce to warm through before serving.
