  • 1 tsp salt
  • 1 tbsp sugar
  • 1 packet active dry yeast
  • 1 cup warm water
  • 2 tbsp unsalted butter, melted
  • 1 tbsp fresh rosemary, chopped
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 egg (for egg wash)
  • Coarse salt (for topping)
  • 10 cups water (for boiling)
  • ¼ cup baking soda

Instructions

  1. In a large mixing bowl, combine flour, salt, and sugar. In another bowl, dissolve yeast in warm water; let sit until foamy (about 5 minutes). Add yeast mixture to flour along with melted butter and rosemary. Stir until combined and knead on a floured surface for about 5 minutes until smooth.
  2. Place the dough in an oiled bowl, cover with a towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  3. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Punch down the risen dough and divide it into 8 pieces. Flatten each piece, add mozzarella cheese in the center, seal into a ball shape, then roll into a rope and twist into pretzel shape.
  5. Boil water mixed with baking soda in a large pot; drop pretzels in one at a time for about 30 seconds each before placing on the baking sheet.
  6. Brush with beaten egg, sprinkle with coarse salt and Parmesan cheese. Bake for 12-15 minutes until golden brown.
