  • 3 medium Poblano Peppers
  • 1/4 cup Unsalted Butter
  • 1 medium White Onion
  • 1 cup Celery
  • 1 1/2 cups Baby Gold Potatoes
  • 3 cloves Garlic
  • 1 teaspoon Ground Cumin
  • 5 cups Lower-Sodium Chicken Broth
  • 1 1/22 pounds Boneless Skinless Chicken Breasts
  • 1 cup Heavy Cream

Instructions

  1. Preheat your oven to 450°F (230°C) and roast the poblano peppers on a baking sheet for about 20 minutes until charred. Cover with plastic wrap to steam.
  2. In a large pot, heat olive oil over medium heat. Sauté diced onion and celery until softened (5-7 minutes), then add minced garlic and cook for another minute.
  3. Peel and chop the roasted poblanos, then add them to the pot along with diced potatoes, cumin, salt, black pepper, and chicken broth. Bring to a boil and simmer until potatoes are tender (about 15 minutes).
  4. Blend the soup until smooth using an immersion blender or regular blender.
  5. Stir in heavy cream and cooked chicken chunks, warming through before serving.
