  • 5 medium russet potatoes
  • 1.5 lbs chicken breasts
  • 3 tablespoons unsalted butter
  • 3 tablespoons garlic, minced
  • 1 ¼ cups garlic parmesan sauce
  • 1.5 cups mozzarella cheese, shredded
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 3/4 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1.5 teaspoons paprika
  • 1.5 teaspoons onion powder
  • 1.5 teaspoons Italian seasoning
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, toss cubed potatoes with olive oil, salt, pepper, garlic powder, and smoked paprika.
  3. Spread the seasoned potatoes on a baking sheet and bake for 20 minutes until slightly softened.
  4. While the potatoes are baking, season chicken pieces with salt, pepper, paprika, onion powder, Italian seasoning.
  5. In a large skillet over medium heat, melt butter and cook seasoned chicken for 6-8 minutes until browned.
  6. Add minced garlic and red pepper flakes to the skillet; cook for another minute until fragrant.
  7. Stir in garlic parmesan sauce to coat the chicken well.
  8. After 20 minutes of baking the potatoes, pour the chicken mixture over them on the baking sheet.
  9. Top with shredded mozzarella cheese and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  10. Garnish with fresh parsley before serving.
