  • 3 tablespoons cornstarch
  • 1 medium carrot
  • 6 ounces snow peas
  • 6 ounces mushrooms
  • 8 ounces canned water chestnuts
  • 8 ounces canned bamboo shoots
  • 3 cloves garlic
  • Chicken stock
  • Soy sauce
  • Sugar
  • Sesame oil

Instructions

  1. Toss sliced chicken with cornstarch, salt, and pepper in a bowl. Add oil and mix well.
  2. Heat oil in a wok over medium-high heat. Cook chicken until no longer pink; remove from the pan.
  3. Stir-fry carrots, snow peas, and mushrooms for about 3 minutes.
  4. Add water chestnuts, bamboo shoots, and garlic; sauté for 1 minute.
  5. Return chicken to the pan; add chicken stock, soy sauce, sugar, and sesame oil. Bring to a boil.
  6. Thicken sauce with a cornstarch slurry if desired; adjust seasoning as needed.
  7. Serve hot over rice or noodles.
