  • 1 & 1/4 cup chopped pecans
  • 2/3 cup light corn syrup
  • 1/3 cup light brown sugar
  • 2 large eggs (lightly beaten)
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon (optional)
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F and prepare muffin tin with nonstick spray.
  2. Roll out pie crust and cut into 3-inch circles; press into muffin tin cavities.
  3. In a bowl, mix brown sugar, corn syrup, melted butter, pecans, optional cinnamon, salt, and eggs until combined.
  4. Fill each crust about two-thirds full with the filling.
  5. Bake for approximately 20 minutes until golden brown.
  6. Allow to cool briefly in the tin before transferring to a wire rack.
