  • 1 1/4 cups unsalted butter (softened)
  • 2 1/4 cups all-purpose flour
  • 28 ounces sweetened condensed milk
  • 6 ounces dark chocolate (60% cacao)
  • Sea salt (for finishing)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan or line with parchment paper.
  2. Cream together softened butter and sugar until light. Mix in beaten egg yolk, then gradually add flour and salt until combined. Press into the prepared pan.
  3. Bake for about 20 minutes until lightly golden; cool.
  4. In a saucepan over medium heat, combine sweetened condensed milk, corn syrup, and butter. Stir continuously until melted and thickened (about 5 minutes). Pour over cooled shortbread.
  5. Melt dark chocolate in the microwave or double boiler; pour over caramel layer and spread evenly. Sprinkle with sea salt if desired.
  6. Refrigerate for at least an hour to set before cutting into squares.
