  • 4 ears fresh corn (shucked)
  • 1 1/2 Tbsp vegetable oil
  • Salt (to taste)
  • 1/3 cup chopped onion (red or green)
  • 1/3 cup chopped cilantro leaves
  • 1 jalapeno pepper (minced, optional)
  • 1 clove garlic (minced)
  • 3 oz Cotija cheese (crumbled)
  • 3 Tbsp mayonnaise
  • 1 1/2 Tbsp fresh lime juice
  • 1/2 tsp chili powder
  • 1 1/2 medium ripe avocados (chopped)

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  2. Add corn, season with salt, and toss well. Cook while stirring occasionally until charred on all sides, about 6-9 minutes.
  3. Remove from heat and allow to cool slightly.
  4. In a medium bowl, combine the cooled corn with avocados, onions, cilantro, jalapeno, garlic, Cotija cheese, mayonnaise, lime juice, and chili powder. Toss gently to mix.
  5. Serve immediately with additional chili powder if desired.
