  • 1 tbsp olive oil
  • 1 (15 oz) can corn, rinsed and drained
  • 2 tbsp mayo
  • 2 tbsp sour cream or plain Greek yogurt
  • Fresh lime juice
  • 1/4 cup cotija cheese, grated
  • Chili powder
  • Paprika
  • Salt
  • Pepper

Instructions

  1. Preheat air fryer to 380°F or oven to 400°F.
  2. Toss brussels sprouts with olive oil, salt, and pepper. Cook in air fryer for 6 minutes; toss and continue for another 4-7 minutes until crispy. For oven baking, roast for 18-20 minutes.
  3. Heat corn in a small saucepan over medium heat until warmed.
  4. In a bowl, mix mayo, sour cream, lime juice, chili powder, and paprika.
  5. Combine the corn mixture with the sauce in the saucepan for about 2 minutes.
  6. Mix corn sauce with crispy brussels sprouts; garnish with cotija cheese and cilantro before serving.
