  • 1 cucumber
  • 1 pint grape tomatoes
  • 1/2 red onion
  • 1/4 bunch fresh parsley
  • 1 can cannellini beans
  • 2 oz. feta cheese
  • Olive oil
  • Red wine vinegar
  • Lemon juice
  • Oregano
  • Salt
  • Pepper

Instructions

  1. In a mixing bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper until blended.
  2. Chop cucumber and grape tomatoes; finely dice red onion (soak in ice water if desired) and roughly chop parsley.
  3. Combine chopped vegetables in a large bowl and drizzle with the vinaigrette; stir gently to coat.
  4. Rinse and drain cannellini beans and tuna before folding them into the salad along with crumbled feta cheese.
  5. Serve immediately or refrigerate for up to four days.
