  • 2/3 cup uncooked quinoa
  • 1 1/3 cups low-sodium chicken broth
  • 1 cup chopped olives
  • 1 (8-ounce) jar diced roasted red bell peppers
  • 1 cup diced cucumbers
  • 1 cup halved cherry tomatoes
  • 23 finely chopped green onions
  • 1/4 to 1/3 cup chopped cilantro or basil
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 2 tablespoons red apple vinegar
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • Pinch of dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa in a fine mesh strainer and drain well.
  2. In a saucepan, combine quinoa and chicken broth. Bring to a simmer, cover, reduce heat to medium-low, and cook for 14–15 minutes until tender. Let rest off the heat for another 10–15 minutes before fluffing with a fork.
  3. In a large bowl, add cooled quinoa and mix in olives, roasted red peppers, cucumbers, tomatoes, green onions, and herbs.
  4. In a separate bowl, whisk together olive oil, vinegar, lemon juice, garlic, oregano, salt, and pepper.
  5. Pour dressing over the salad mixture and toss gently to combine. Top with feta cheese.
