  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 tsp garlic powder
  • 1 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 16 oz. coleslaw mix (shredded cabbage and carrots)
  • 1/2 red bell pepper, diced
  • 1/4 cup chopped parsley
  • 1 can sliced black olives
  • 1/2 12oz. jar banana pepper rings
  • 2 oz. feta, crumbled

Instructions

  1. In a mixing bowl or jar, combine olive oil, lemon juice, garlic powder, oregano, salt, and black pepper. Whisk or shake well to emulsify the dressing.
  2. Dice the red bell pepper and chop the parsley.
  3. In a large bowl, add the coleslaw mix, diced bell pepper, drained olives, crumbled feta, banana peppers, and chopped parsley.
  4. Pour the dressing over the salad and toss until all ingredients are evenly coated.
  5. Allow the slaw to rest for at least 15 minutes before serving to enhance flavor.
