  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 cup pumpkin puree
  • 3 cups old-fashioned rolled oats
  • 1/2 cup unsweetened coconut flakes or chips
  • 1/2 cup chopped pecans
  • 1/4 cup pumpkin seeds
  • 2 teaspoons pumpkin pie spice
  • Up to 1 teaspoon flaked sea salt

Instructions

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a large microwave-safe bowl, combine coconut oil and maple syrup. Microwave for 30-60 seconds until melted, then stir in pumpkin puree until well combined.
  3. Add rolled oats, coconut flakes, chopped pecans, pumpkin seeds, pumpkin pie spice, and salt to the bowl. Mix until evenly coated.
  4. Spread the mixture evenly on the prepared baking sheet and bake for 35-40 minutes until golden brown, stirring halfway through.
  5. Allow to cool for at least 15 minutes before breaking into pieces and storing in an airtight container.
