  • 2 large beets, thinly sliced
  • 2 large golden sweet potatoes, thinly sliced
  • 2 large orange sweet potatoes/yams, thinly sliced
  • 3 tablespoons brown butter
  • 2 tablespoons maple syrup
  • 1 cup shredded Gruyere cheese
  • 1/3 cup crispy fried shallots

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine sliced beets and sweet potatoes. Drizzle with brown butter and maple syrup; mix until well-coated.
  3. Layer half of the vegetable mixture in a baking dish and sprinkle with half of the Gruyere cheese. Repeat layers, finishing with cheese on top.
  4. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
  5. Sprinkle crispy shallots on top and return to the oven for an additional 5 minutes.
  6. Let cool slightly before serving.
