  • 3 large apples
  • 1 onion
  • 5 cloves garlic
  • ¼ cup olive oil
  • ¼ cup maple syrup
  • 3 tablespoons Dijon mustard

  • 1 teaspoon thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Core the apples and chop them into ½” cubes. Cut the carrots on the bias into ¼” thick slices. Dice the onion and finely chop the garlic.
