  • 1/2 cup brown sugar
  • 1 large egg
  • 2 teaspoons maple extract
  • 4 tablespoons butter (for filling, room temperature)
  • 1 cup confectioners sugar
  • 2 tablespoons maple syrup

Instructions

  1. In a bowl, whisk together flour, baking powder, and salt; set aside.
  2. In a stand mixer, cream butter and sugars until light and fluffy. Add egg and maple extract; mix until combined.
  3. Gradually add dry ingredients; mix until just combined. Chill dough for at least 1 hour.
  4. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  5. Roll out chilled dough to 1/4-inch thickness and cut out cookies using a maple leaf cutter.
  6. Bake for 8–10 minutes or until edges are lightly golden. Cool on wire racks.
  7. For the filling, cream butter until smooth, then add confectioners' sugar and maple syrup; mix well.
  8. Spread filling between two cookies to assemble.
