  • 11/4 lbs boneless, skinless chicken thighs
  • 1/2 cup gluten-free flour
  • 2 tablespoons bourbon
  • 1 cup chicken broth
  • 1/4 cup chopped pecans
  • 3 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Season gluten-free flour with salt and pepper in a shallow dish. Dredge chicken thighs in the flour mixture.
  2. Heat olive oil in a cast iron skillet over medium-high heat. Sear the chicken until golden brown on both sides; remove from skillet.
  3. Mix together bourbon, chicken broth, maple syrup, chopped pecans, Dijon mustard, apple cider vinegar, Tamari, and rosemary in a bowl. Pour into the skillet.
  4. Nestle the chicken back into the sauce and cover loosely with foil. Simmer until the sauce thickens and chicken is cooked through (about 10 minutes).
