  • 1 cup water
  • 1 (14 oz) can coconut milk
  • 1 ¼ teaspoons salt
  • 1 large mango (diced)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear to remove excess starch.
  2. In a rice cooker or saucepan, combine rinsed sushi rice with 1 cup of water. Cook according to your rice cooker's instructions, or bring to a boil on the stovetop, then reduce heat and cover, cooking for about 15-20 minutes.
  3. While the rice cooks, heat coconut milk and salt in a saucepan over low heat until dissolved (do not boil).
  4. Once cooked, transfer the rice to a mixing bowl and pour half of the coconut sauce over it; gently mix.
  5. Serve sticky rice in bowls topped with diced mango and an additional drizzle of coconut sauce.
