  • 2 tbsp olive oil
  • 1 onion (finely chopped)
  • 3 cloves of garlic (finely chopped)
  • 4 ripe tomatoes (chopped)
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic and spices (cumin, paprika, smoked paprika, turmeric) and cook for 2 minutes until fragrant.
  3. Add chopped tomatoes and tomato paste; mix well.
  4. Incorporate canned and dry white beans along with one cup of vegetable broth; stir to combine.
  5. For stovetop: Bring to a boil, then reduce heat to low and simmer for 25 minutes until beans are tender. For Instant Pot: Seal the lid and cook on high pressure for 10 minutes.
  6. Adjust seasoning with salt and pepper before serving hot.
