  • 1 lb ground beef
  • 1/2 cup frozen corn
  • 1 tbsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 1/2 cup water
  • Toppings: shredded cheddar cheese, guacamole, pico de gallo, sour cream

Instructions

  1. Preheat oven to 425°F (220°C). Wash and dice potatoes into bite-sized cubes. Spread on a baking sheet, drizzle with olive oil, and season with salt, pepper, and garlic powder. Roast for about 25 minutes until golden brown.
