Instructions

  1. Preheat the oven to 400°F. Bake scrubbed russet potatoes on a baking sheet until fork-tender (about 45 minutes).
  2. Cook the bacon until crispy, then crumble it. Chop green onions.
  3. In a mixing bowl, whisk together mayonnaise, sour cream, and apple cider vinegar until smooth.
  4. Once the potatoes have cooled, cut them into bite-sized pieces. In a large bowl, combine potatoes, crumbled bacon, chopped green onions, and cheddar cheese. Pour in the dressing and fold gently until coated.
