  • 4 cups cooked day-old jasmine rice
  • 6 oz ground chicken
  • 3 tbsp fish sauce
  • 3 tbsp sugar
  • 1/2 tsp black pepper
  • 3 tbsp cooking oil
  • 1 shallot, sliced
  • 2 tbsp chopped lemongrass
  • 2 to 4 Thai chili, chopped
  • 4 cloves garlic, chopped
  • Chopped cilantro for garnish (optional)

Instructions

  1. Prepare the sauce by mixing fish sauce, sugar, and black pepper in a bowl. Set aside.
  2. Heat oil in a wok over high heat and stir-fry shallot, lemongrass, Thai chili, and garlic until fragrant.
  3. Add ground chicken and cook until golden brown.
  4. If using eggs, scramble them on one side of the wok and mix with the chicken once set.
  5. Stir in cold jasmine rice and pour the sauce around the edge of the wok. Mix well until rice is evenly coated.
  6. Turn off heat and garnish with chopped cilantro before serving.
