  • 1 lb tiger or jumbo prawns (peeled and deveined)
  • 2 tablespoons fish sauce
  • 1 grated lemongrass stalk (white part only)
  • 1 tablespoon powdered sugar
  • 1 teaspoon Sriracha
  • 1 clove garlic (minced)
  • 1.5 tablespoons chili garlic sauce
  • Juice from 1 small calamansi or lime

Instructions

  1. Clean the shrimp under cold water and pat dry.
  2. In a bowl, mix the shrimp with fish sauce, lemongrass, sugar, Sriracha, garlic, chili garlic sauce, water, cilantro, and calamansi juice. Marinate for at least 15 minutes.
  3. Thread three shrimp onto each skewer and brush lightly with oil.
  4. Preheat the grill to medium-high heat and cook skewered shrimp for 2-3 minutes on each side until charred and cooked through.
