  • 12 oz Fettuccine
  • 1 lb Large Shrimp (peeled and deveined)
  • 2 tbsp Extra Virgin Olive Oil
  • 6 tbsp Unsalted Butter (divided)
  • 4 cloves Garlic (minced)
  • 1/4 cup Dry White Wine
  • 1/2 cup Heavy Cream
  • Juice and zest of 1 Large Lemon
  • 1/4 cup Fresh Parsley (chopped)
  • 1/2 cup Parmesan Cheese (grated)

Instructions

  1. Cook fettuccine in salted water until al dente. Reserve 1 cup of pasta water before draining.
  2. Pat shrimp dry, season with salt and pepper, then sear in olive oil over medium-high heat for 1-2 minutes per side until pink. Remove and set aside.
  3. In the same skillet, melt 2 tbsp butter, add garlic, sauté for 30 seconds, then deglaze with white wine until reduced by half.
  4. Stir in heavy cream, lemon juice, and zest; simmer. Whisk in remaining butter until melted, then mix in parmesan cheese. Adjust seasoning.
  5. Toss cooked fettuccine and shrimp into the sauce; use reserved pasta water to achieve desired consistency. Serve garnished with parsley and extra parmesan.
