  • 1/2 cup chicken stock
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon lemon zest
  • 2 cloves garlic (minced)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Kosher salt and freshly ground black pepper (to taste)
  • 2 pounds boneless, skinless chicken thighs
  • 1 1/2 tablespoons canola oil

Instructions

  1. In a medium bowl, whisk together chicken stock, lemon juice, olive oil, lemon zest, garlic, Dijon mustard, oregano, thyme, salt, and pepper until well combined.
  2. Place chicken thighs in a gallon-size Ziploc bag or bowl and pour the marinade over them. Seal or cover and refrigerate for at least 2 hours or overnight.
  3. Heat canola oil in a cast iron grill pan over medium-high heat. Add marinated chicken thighs in batches and cook for about 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165 degrees F).
  4. Remove from heat and serve immediately for optimal flavor.
