  • 2 tablespoons lemon zest
  • ¼ cup cold butter (cubed)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together butter and sugar until light and fluffy. Add lemon zest, eggs, and vanilla extract; mix well.
  3. In another bowl, whisk flour, salt, baking powder, and baking soda. Gradually add dry ingredients to wet mixture until just combined.
  4. Roll tablespoon-sized portions into balls and create indentations with your thumb on prepared sheets.
  5. Bake for about 10 minutes or until edges are golden. Cool slightly before transferring to a wire rack.
  6. For the lemon curd: Whisk lemon juice, egg yolks, sugar, and corn starch in a saucepan over medium heat until thickened. Stir in butter until melted.
