Ingredients

  • 1/2 cup graham cracker crumbs
  • 2 tbsp melted butter
  • 1/2 cup heavy whipping cream
  • 1/2 cup lemon Greek yogurt (or lemon curd mixed with whipped cream)
  • 1 tbsp powdered sugar
  • 1/4 cup lemon curd
  • 1 1/2 cups white chocolate or yellow candy melts

Instructions

  1. Combine graham cracker crumbs, melted butter, and sugar in a mixing bowl. Press firmly into the bottom of silicone molds and freeze for 10 minutes.
  2. Whip heavy cream until soft peaks form. Fold in lemon yogurt, powdered sugar, and lemon extract. Chill for 10-15 minutes.
  3. Melt white chocolate or yellow candy melts; coat the inside of each mold cavity with the melted chocolate and chill until set.
  4. Pipe half of the mousse into each mold, add a spoonful of lemon curd, then top with more mousse.
  5. Press the graham crust on top to seal and freeze for at least 4 hours.
  6. Unmold after freezing and let thaw for 10-15 minutes before serving.
