  • 16 ounces mini farfalle pasta
  • 23 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 zucchini (chopped)
  • 1 yellow squash (chopped)
  • 4 tablespoons butter
  • 1/4 cup fresh lemon juice
  • 1 cup freshly grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. Season the chicken with salt, pepper, lemon zest, garlic powder, Italian seasoning, and onion powder.
  3. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 3-5 minutes on each side until cooked through. Remove from skillet and keep warm.
  4. In the same skillet, add more oil and sauté zucchini and yellow squash for about 2 minutes before adding minced garlic for another 30 seconds.
  5. Combine the hot pasta with butter and lemon juice in the skillet, mixing well. Cut the chicken into pieces and return to the pan.
  6. Serve garnished with parsley and extra Parmesan cheese.
