Ingredients

Scale
  • 2 large chicken breasts
  • 1 pound uncooked potato gnocchi
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • Fresh baby spinach
  • Grated parmesan cheese

Instructions

  1. Cut chicken breasts in half lengthwise to create four cutlets; season with garlic powder and lemon pepper.
  2. In a skillet over medium-high heat, heat olive oil and butter, then sear chicken for 5-6 minutes on each side until cooked through. Remove and keep warm.
  3. Lower heat to medium; add minced garlic to the same skillet and sauté for 30 seconds.
  4. Pour in chicken broth and lemon juice, scraping up browned bits from the pan.
  5. Stir in heavy cream and uncooked gnocchi; simmer uncovered for about 5-7 minutes until gnocchi are tender.
  6. Mix in parmesan cheese and spinach until wilted; return chicken to skillet and coat with sauce before serving.
