Lemon Arugula Pasta Salad is a vibrant, refreshing dish that perfectly balances the peppery bite of arugula with the bright zing of lemon. Ingredients

  • 3.5 oz arugula
  • 8 oz pasta (farfalle or orzo)
  • ½ cup walnuts (finely chopped)
  • ⅓ cup parmesan cheese (finely grated)
  • Juice and zest of 1 lemon
  • 8 Tb olive oil
  • Salt and black pepper to taste
  • 1 Tb capers and brine
  • 1 Tb white balsamic vinegar

Instructions

  1. Cook the pasta according to package instructions until slightly softer than al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, whisk together lemon juice, zest, olive oil, capers with brine, salt, pepper, and optional Dijon mustard.
  3. Stir in the grated parmesan cheese.
  4. Add the rinsed pasta to the dressing mixture and toss gently until coated.
  5. Fold in arugula (and basil if using) before serving.
